The French French 75

I completely rail against the agreed upon recipe for this cocktail.  How many historic gins come from France?  There are three viable origins of the cocktail.  I don’t care.  When I say gin do you think France?  No.  When I say Cognac do you think France?  Yes.  The cocktail was definitely named after the French 75mm artillery piece.  Gin was prized for warriors in England and Holland but France?  No.  I declare that the French 75 is all classic French ingredients.  End of story.  Boom.  

Ingredients

2 oz Cognac

1 oz Lemon Juice

2 sugar cubes

3 oz Champagne

Garnish

Lemon twist.

Glassware

7 oz champagne flute

Assembly

Place sugar cubes on bar spoon.  Measure Lemon juice and splash on the sugar to start melting the sugar and put all into shaker.  Measure cognac and add to shaker and stir to dissolve sugar.  Add ice to shaker and shake until cool.  Strain into flute and top with champagne.  Put dash of angostura bitters on sugar cube then put cube at bottom of glass.  Pour champagne very slowly as the champagne reacts explosively with the cube.  Take the twist and run around the lip of the glass to coat with lemon oil and place in the cocktail.

Suggestions

Yes 90% of the recipes out there have Gin playing the major role instead of my cognac recipe.  If you want to succumb to peer pressure go ahead and use gin but stir instead of shake.
