Daiquiri

This is a special cocktail for me.  I was on my very first sommelier job.  The food writer, John Mariani, was sitting down in my station.  I was ready with a plan with my chef.  I had my recommendations ready.  I was on top of my game and he ordered a daiquiri neat and I got stopped in my tracks.  I had no idea what it was and none of my bartenders did either and I had been a bartender.  That was my first indication that there was a wider world than the one I knew of and I started working on the entire beverage world.

The cocktail itself is simple blend of rum, lime juice and simple syrup crafted in perfect proportions.  Frozen versions during the summer months are great, just please skip the mix in a jug.

Ingredients

2 oz Silver Rum (I prefer Bacardi Silver) 

1/2 oz Lime Juice

1/4 oz Simple Syrup

Garnish

Lime wedge

kosher salt

Glassware

5 oz cocktail glass or Old Fashioned glass

Assembly

In a shaker combine ice, with simple syrup, lime juice, and rum.  Stir vigorously until chilled.  Either strain into a cocktail glass or pour contents into an old fashioned glass.
