Ramos Gin Fizz

It may have been invented in 1888 New Orleans, but they still sling plenty of them at brunch.  We would always run the shakers through the dishwashers after making them because I was always worried about cross contamination from the dairy and eggs.  The acid from the lemon and lime should make the cocktail itself stable, but be diligent in your sanitation for the other cocktails that will be built in the same shaker.

Ingredients

2 ounces gin

1 ounce cream

1 egg white

1/2 ounce lemon juice

1/2 ounce lime juice

1/4 ounce simple syrup

2-3 drops orange flower water

Club Soda

 

Garnish

Wedge of Lemon.

Glassware

12 oz tumbler

Assembly

Measure lime and lemon juice, simple syrup, cream, egg white, and add to shaker.  Shake ingredients until emulsified.  Add Ice and gin then shake until cold and strain into tumbler filled with ice.  Top with Orange Flower Water and club soda.  

Suggestions

Normally gin isn’t shaken but it is necessary to create the emulsion.
